Exciting things are happening in the Raval neighbourhood in Barcelona, on a quiet street opposite a bike rental shop.
That’s where you’ll find the workshop/shop of Florentine Kitchen Knives, a bespoke knife brand that is currently making some of the world’s most distinctive kitchen knives.
Founded by Tel Aviv-native Tomer Botner, the knives are easily identifiable by their unique stacked handles made from Micarta, a composite of fabric, paper and resin.
The knives are laser cut from sheets of high quality carbon steel and heat treated to a hardness of around 60HRC, with the most expensive knife coming in at around €350.
Now they’ve caught the attention of some of some of the world’s best chefs, including the team at Disfrutar in Barcelona and Nick Bril at The Jane in Antwerp. Joan Roca also has one.
