Chefs Paul Kahan and chef Marc Vetri are a force to be reckoned. In this video from Taste Talks Chicago you'll see how the chefs collaborated to make killer short ribs that were smoked and slow cooked for hours before being topped with a chicory pesto.
Taste Talks is an fun event sponsored by S.Pellegrino and Acqua Panna which features chef mashups, food tastings, seminars, dinners and parties. It was held earlier this fall but the behind-the-scenes videos have just become available.
Kahan and Vetri are powerhouses in their respective dining scenes. The former is the chef/owner of The Publican, Avec, Big Star and Blackbird in Chicago. Over in Philadelphia, Vetri while mans his own restaurant empire which includes Vetri, Osteria, Vetri, Amis, Lo Spiedo and Alla Spina.
