A competitive day of cooking was held at the Asia regional final of S.Pellegrino Young Chef 2020 on 10 September 2019 when ten hopeful young chefs cooked for gold in front of a professional chef jury at Ecole Tsuki in Tokyo.
Following some outstanding displays of culinary prowess by some of the most talented young chefs in Asia, Kevin Wong was announced as the winner and will represent the region at the S.Pellegrino Young Chef Finale in 2020.
The 25 year old sous chef from Meta Restaurant in Singapore managed to wow the judges with his signature dish, “Celebration of a Duck” with the support of his mentor chef Sun Kim, convincing Daniele Cason (Japan), Garima Arora (India), Julien Royer (Singapore), Hyun Seok Choi (South Korea) and Shoko Hirase (Japan) that he is the best young chef in the region.
Three other young chefs were also awarded during this regional heat complementing the winner's award and highlighting the transformative power of gastronomy and its impact beyond the kitchen.
These three young chefs will also join their regional finalist at the Grand Finale in Milan, with a chance of winning the global award in their category.
Acqua Panna Award for Connection in Gastronomy
Voted by the Regional Mentors, the winner of this award will produce a dish that represents diversity and recognises the beauty of different cultures coming together to create something fresh and exciting.
Winner: Tor Aik Chua from Restaurant Zén, Singapore with his signature dish ‘Whole Kinmedai With Malaysian Elements’.
Fine Dining Lovers Food for Thought Award
Voted by the online Fine Dining Lovers community, this award will be for the young chef who best represents their
personal belief within their dish.
Winner: Karan Upmanyu from Toast and Tonic, India with his signature dish ‘Shades of the Desert’.
S.Pellegrino Award for Social Responsibility
Voted by Food Made Good, the internationally recognized voice on Sustainability in food, this dish will represent the principle that that food is best when it is the result of sustainable practices.
Winner: Muhammad Afif Adnanta Nasution from Teatro Gastroteque Bali, Indonesia with his signature dish ‘Smoked Java Mackerel with Batak Sauce.'
