With June comes summer and all the summer fruits that we recall from those endless summer days of our childhood, as well as some spectacular vegetables. This month you can look forward to apricots, blueberries, cherries, kiwi, lettuce, mangoes, peaches, strawberries, corn, Swiss chard, watermelon, and zucchini. Here's what to do with them.
Zucchini
June is the season of zucchini, or courgettes as they are known in Europe, and these beautiful green vegetables, with their subtle flavour and bready texture, are one of the most versatile vegetables you can use. So buy in bulk, while in season, and try as many of these recipes as you can.
