The team at Rene Redzepi's Mad Food Camp are on a roll. They've released the second video from the 2012 edition of the symposium.
The video features Italian chef Massimo Bottura, whose restaurant Osteria Francescana is often considered the best chef in Italy thanks to three Michelin stars and ranking 5th on the S. Pellegrino World's 50 Best Restaurants list.
Massimo Bottura, who recently spoke to FDL about territory, local ingredients and tradition, addressed his Mad Camp audience with the topic of cultural consciousness.
