Customers enjoying your food is what every chef in the world works towards, customers literally crying after tasting one of their dishes is what they dream about.
In the below video the Italian chef Massimo Bottura, who runs the Osteria Francescana restaurant which sits at 3rd on The World's 50 Best Restaurants List - discusses the importance of displaying emotional memories in cooking and how one of his dishes once brought an elderly couple to tears.
The dish Bottura speaks about is made with pasta and beans and the chef explains how it involves inspiration from Alain Ducasse and memories from his time working with Ferran Adria and the cooking of his grandmother.
As usual, Bottura is on fine form as he draws you right into his world of flavour and feeling. The chef has recently released a new book, Never Trust a Skinny Italian Chef.
