The Swedish chef Magnus Nilsson has announced planned to release a second book with the publishing house Phaidon.
Moving on the success of his first book, Fäviken, Nillsson told Phaidon that he's now working on documenting a comprehensive overview of Nordic cuisine, something the chef says has never been done before in English.
The chef told Phaidon: "The idea is that there has been nothing comprehensive published in English on Nordic cooking, basically ever,” he told us. “There have been books about Scandinavian cooking or on national cooking back in the 1970s but nothing since then. And everyone confuses the countries and the regions and no one really understands how diverse it all is. So I'm aiming to show all that with this new book.”
The chef added that the initial plans for the book include around 1000 recipes from countries across the Nordic regions. As well as recipes Nilsson says he will look to include texts on the history of each country's foods, how they're different and how they all connect.
Phaidon will continue speaking with the Swedish chef throughout his project as he keep a journal of his travels.
