How to Make Honey-Glazed Ham

Take a large stockpot and pour in the milk. Add the onion, garlic, ginger, allspice, peppercorns, and thyme and the ham. Cook on medium to low heat, stirring until the milk simmers. Do not let it boil. Reduce the heat to low and allow to cook for a few hours. Turn the ham carefully from time to time. Use a meat thermometer to check temp at 71°C at the thickest part.

How to make a Glaze for Honey-Baked Ham

Take the black cardamom seeds and crush in a mortar. Put them along with the other glaze ingredients in a small saucepan and heat until everything is combined and the glaze is bubbling. Remove the ham from the liquid and place on a roasting tray. Dab with a paper towel. Use a sharp knife to score the skin of the ham and then take a brush and paint on half the glaze. Start at the top and allow the glaze to flow over the ham and use upward brush strokes to cover it evenly.

Bake in the oven for 20 minutes, until the glaze has formed a crust, then take it out and carefully paint on the remaining glaze. Bake for another 20 minutes, then remove and paint on another layer of glaze. Bake for ten more minutes. Remove from the oven and allow the meat to rest for up to an hour before serving.
