Hiša Franko, the restaurant of chef Ana Roš and Valter Kramer, is moving to Madrid for three weeks from 19 November to 7 December at the NH Eurobuilding Hotel in Madrid.
The Slovenian restaurant located in Kobird on the Italian border, that currently sits at number 38 on the World's 50 Best Restaurants list, will pop up in Madrid this month, as part of the In Residence series.
Chef Ana Roš, named best female chef in the world in 2017, will be moving the entire Hisa Franko team and equipment to the hotel in the Spanish capital for three entire weeks, where she'll offer the same service as in her Hiša Franko restaurant from Tuesday to Saturday.
Drawing on the same food philosophy for which she has become so renowned she will serve elaborations inspired by nature and the small producers in her country.

“I want to show in Madrid our philosophy in the kitchen. In Slovenia we have fantastic products that have never left our area, cheeses and wines that, we are sure, will surprise you,” said the chef.

In Residence is an annual event, which transports some of the world's best chefs and restaurants to Madrid, including Mauro Colagreco from Mirazur, Grant Achatz and Alinea, Nacho Manzano of Casa Marcial, and Colombian chefs/restaurants from the Latin America's 50 Best Resturants list.
