The leading gastronomy symposium Food On The Edge, sponsored by S.Pellegrino, will return this year with the announcement of new themes and some world-renowned guest speakers.
The themes for this year’s symposium, which will once again be held at Airfield Estate in Dublin, are Disruption and Regeneration. Appropriate topics will surely generate plenty of interesting discussion after the last two years of pandemic, and the current challenges of inflation, supply chain problems and staffing issues facing the industry.
Rasmus Munk
As always, the line-up is world-class, and the event’s organisers have announced that Rasmus Munk of Alchemist in Copenhagen will be one of the headline speakers. Calum Franklin, ‘the pie king’, who heads up the popular The Pie Room in the Holborn Dining Room in London, and Søren Ørbek Ledet, co-owner and sommelier of three-Michelin-star Geranium, will also attend.
Day two will see Fine Dining Lovers' Editor-in-Chief Ryan King take the stage to share the results and analysis of the Front Of House Survey. Fine Dining Lovers canvassed its readership for their opinions on all the major issues facing the people who work front-of-house in the restaurant industry. A huge response provided eye-opening results which King will present with all the appropriate analysis/
Making a welcome return to Food on the Edge are authors, chefs and activists, including food-educator Alice Zaslavsky, Jess Murphy of Kai Galway, social gastronomy disruptor Joshna Maharaj, and thought-leader on food and cities Carolyn Steel.
Simon Rogan of L'Enclume
Simon Rogan of L’Enclume will make his Food On The Edge debut, while Matt Orlando, of Copenhagen’s Amass - a Food On The Edge veteran - will also return for FOTE 2022.
