In what is an FDL exclusive, and an internet premiere, we are happy to bring you this beautiful short movie created by the Roca Brothers at their El Celler De Can Roca restaurant in Girona.
Called VI, the video shows the restaurant conceptualized through the use of ingredients, signature dishes, wines, and a magical reaction triggered by the finger of the eldest brother and sommelier, Josep. All this is packaged into what is a beautifully crafted stop-motion animation.
The question posed throughout is simple. Is the wine dancing around the food or the food dancing around the wine? An abstract implementation but one that is firmly routed in the philosophy at the Celler that each ingredient, dish, pairing and wine should sing together in perfect harmony.
The film, which was created by Umami Video, touches on an almost cosmic dance that is played out in the restaurant every day, creating metaphors between that of the planets shifting and the way in which ingredients, wines, notes, smells and flavors all interweave at the table.
The ingredients - or in this case mini planets - spin at their own speed. Each with an orbit that depends on the density of the wine they reflect. We see dishes such as J oan Roca's famous Iberian suckling pig, an example of perfect pairing between kitchen and cellar, deconstructed into all its parts.
The signature Roca dish is made of Iberian pork cooked for 32 hours before the crackling is crisped and served alongside the notes that make up Riesling. Mango, orange, melon, beet root and, in this case, black garlic - we see these ingredients slowly begin to circle the glass as the Riesling is drawn towards the plate it best represents. A process that continues throughout the film with individual components of dishes broken down to reveal the deep connection that is achieved between wine and food within the restaurant.

The film concept was devised by El Celler de Can Roca & Umami Video, the screenplay written by Esther Massats and directed by Joan Gurí. The animation, compositing and editing was done by Marc Sáez & Joan Gurí and the director f photography was Andrea Resmini.
