When Mexican chef Enrique Olvera opened his restaurant Cosme in Manhattan last summer his mission was to give New Yorkers a different taste of Mexico. To achieve this, the chef went as far as opening a tortilla shop in Brooklyn to ensure his new restaurant had the freshest tortillas possible.
Fast forward almost a year and Cosme is being lauded for it's wonderful food. In a recent Q&A with Spanish newspaper El PaĆs, the chef shared his thoughts on why he thinks the restaurant has been successful so far:
"I think everyone has re-evaluated the tortilla. I think they had a much simpler notion of Mexican cuisine. The fact that we are working with different products and unconventional ideas, I think that's the reason behind the success of Cosme."
Olvera also creates nouveau Mexican cuisine at his flagship restaurant Pujol in Mexico City, which ranks 20th on the World's 50 Best Restaurants list sponsored by S.Pellegrino and Acqua Panna.
