Daniel Humm and Will Guidara have rolled into Los Angeles with their first project on the West Coast, a Nomad Hotel inside the historical Downtown LA building, Giannini Place. Housed within a truly iconic spot that’s been renovated with the help of designer Jacques Garcia, Nomad LA will see the distinct Humm and Guidara brand stamped across the food, drink and, of course, service.
The duo will work across five distinct areas inside the Nomad LA, offering up some of their famous creations from the Nomad’s New York location and some riffs on Humm’s Eleven Madison Park dishes.
Areas include The Coffee Bar which will be modelled around the famous Caffè Florian in Venice, Italy. A Library & Lobby which will mirror the famous, beautiful and oh-so-cosy style of the Nomad Library in New York. Transforming in the evening into a cocktail spot, the space is also joined by an all-day Lobby Restaurant serving dishes such as Lasagnette, Chicken Milanese, the delicious Humm Dog and the chef's famous Milk & Honey combo, only this time it’s packaged within an ice cream sandwich. The Giannini Bar is another area under trusted Humm and Guidara guidance, though this is a space where guests can sit back and sample a range of expertly cocktails crafted from award winning bar director Leo Robitschek.
For those who want that formal touch, the Mezzanine is where you’ll be able to grab what they're describing as a ‘distinct menu’ - included Humm’s riff on roast chicken - something which comes pretty close to poultry perfection. There's also a Rooftop experience coming for Spring, with art, amazing views, delicious snacks and cocktails all promised.

It's a monster project that sees the duo, joined by executive chef Chris Flint, pastry chef Mark Welker and general manager Jeffrey Tascarella, tackle everything from morning coffee to intimate private evening dining.
