Chef David Chang has been slinging some burger bullets with shots fired in Australia’s direction. The chef, who runs the Momofuku restaurants, called out Aussie burgers in a piece in his Lucky Peach magazine.
"You know who f---- up burgers more than anyone else in the world? Australians. Australia has no idea what a burger is. They put a fried egg on their burger. They put canned beetroot on it, like a wedge of it. I am not joking you. This is how they eat their burger.”
The piece, which is actually Chang’s burger manifesto, highlights a number of the chef’s pet hates when it comes to burgers. He’s not into salad on burger, he definitely doesn’t like mustard and for god’s sake, don’t try give him what he believes to be the ‘dumbest’ ever creation, a Wagyu burger.
It seems Chang actually like his burgers pretty simple, bun - no brioche or pita - just a simple bun, burger and cheese - and that cheese should be the classic American burger cheese because, as the chef says, that stuff was made for burgers.
