Tuna Tartare with Foie Gras and Caramelized Eggplant
Okabe combines foie gras with traditional Japanese ingredients like mirin and sake to make a velvety cream. A bit of caramelized eggplant brings out the natural sweetness of the fresh tuna. The finishing touch? A sprinkle of tobiko roe.
