Culinary maestro Albert Adriá shares the secret recipe for Enigma’s famed Air Pancake in this short but useful how-to video.
The ingredients are relatively simple and there is no special equipment or particular gadgets that you will need to replicate this small, bite-sized treat that they serve in one of the world’s best restaurants.
So, 150 gr flour, 25 gr corn starch, 30 gr sugar, 0.3 gr bicarbonate, 1 gr salt, 1 gr baking powder, 1 gr albumin and 170 gr sparkling water are all you’ll need to create the mix for the perfect air pancake.
Then place a few small dots of the mixture onto a hot plate panini grill, first, the plates are closed to seal the pancakes then they are lifted up to allow the air enter and for the pancakes to rise.
Adriá finishes the air pancake with a dollop of cream of pistachio and smeared with a knife.
