This year’s Michelin Guide to the Nordics included three new restaurants gaining two Michelin stars: KOKS in the Faroe Islands, Gastrologik in Stockholm, and Noma in Copenhagen.
It’s business as usual for René Redzepi’s Noma, the restaurant re-entering the two star category that it had held prior to its refresh last year. The opening of Noma 2.0 in February 2018 saw the introduction of a seasonal menu system, which takes three themes of ingredients and highlights them when they are at their best. The restaurant is currently high in its seafood season in which Redzepi brings out the diversity of what grows underwater in Scandinavia. Seafood season will then be followed by vegetables in summer, then game and forest in the fall.
Some distance away from the city is KOKS, found on the Faroe Islands. Lead by chef Poul Andrias Ziska, this new two star restaurant focuses on the unique offerings of the volcanic archipelago, taking its produce and combining them with both modern and ancient techniques known to the region such as drying, fermenting, salting and smoking to create dishes that closely represent the smells and flavours of its surroudning landscape. Sustainability, seasonality, modernity are the key words to the food at KOKS.
Last but not least we have Gastrologik, a 30-seat modern Scandinavian restaurant in the heart of Stockholm, run by chefs Jacob Holmström and Anton Bjuhr. Also working within the local food movement, Gastrologik uses exclusively Swedish produce that come together in seasonally changing menus served in a minimal nordic dining space. The duo also have a casual dining bistro adjacent to their fine dining venue, Speceriet.
