Radish and Radicchio salad with Pine Nuts
A medley of radicchio, radishes and cucumber to prepare this vegan salad topped with pine nuts: easy to make, this recipe is perfect for a light dinner.

ingredients
Radicchio
1, shredded
Cucumber
1, seeds removed and cut into batons
Radishes
1 bunch, finely sliced
Apple cider vinegar
4 tbsp
Olive oil
6 tbsp
Basil
8 leaves, finely chopped
Garlic
1 clove
Sugar
1 pinch, unrefined
Pine nuts
50 g, toasted
Preparation
- Mix together the radicchio, radishes and cucumber and place in serving bowls.
- Place the vinegar, oil, basil, garlic and sugar in a tall narrow beaker and blend to make a smooth dressing.
- Drizzle the dressing over the salad and scatter over the pine nuts.
