Preparation
To make a gluten-free béchamel sauce, first melt the butter in a saucepan.
Add the potato flour, stirring all the time, to prevent this mixture (called roux) from sticking to the pan.
Add the milk, a drizzle at a time, continuing to stir until the sauce is smooth and dense.
Season with salt and nutmeg: the gluten-free béchamel sauce is ready for use in your favourite recipes.
