¾ cup (110g), toasted

Lemon juice
juice of half a lemon
Red wine vinegar
1 tsp (5ml)

The recipe for romesco originated in Tarragona, a port city in the Catalonia region, where fishermen made this sauce to liven up the day's fresh catches. It's used as a sauce, dip, or spread to add flavour to a variety of dishes. Romesco sauce can be made in several different ways, and there is no single recipe for it. Step 01

Combine all the ingredients in a food processor fitted with a blade. Blend or pulse until you reach the desired consistency.

Tips

If you have the time, consider roasting your red peppers for a richer, more flavourful taste.

Begin with a modest amount of seasoning, and gradually add more to your liking. This sauce is somewhat spicy, so if you're concerned about it being too piquant, start with a smaller quantity (or none at all) of paprika or red pepper flakes. You can always add more later.

 

What to serve it with

Romesco was traditionally paired with fish, but you can serve it over practically anything. It's a versatile sauce or dip to use with grilled chicken or lamb kebabs, roasted or grilled vegetables, pita bread, or crusty bread. You can use it to dip fish sticks or deep-fried calamari. In addition, it complements any kind of egg dish, whether it's a frittata, scrambled eggs, or a breakfast sandwich. Romesco sauce adds a burst of flavour to any dish.

 

Storage

Romesco sauce will keep in the fridge for 5-7 days in an airtight container.
