It's that time of the year again. Welcome to warm sweaters, red and orange trees, and all things pumpkin. Pumpkin season begins around mid-September and lasts throughout October and November. This versatile fall vegetable – a fruit, botanically – is the star of autumnal classics such as pumpkin soup, pumpkin pie, pumpkin pancakes and pumpkin muffins.
But autumn is also an ideal season for pumpkin bread – a festive loaf perfect for Halloween or Thanksgiving, and an excellent way to enjoy this orange delight. Nothing beats the aroma of pumpkin-filled bread baking in your kitchen on a crisp autumn day. Combine the flour, baking soda, baking powder, spices and salt in a mixing bowl. Set aside.

In a liquid-measuring cup, combine the oil, butter and vanilla.

Combine the pumpkin, sugar, and eggs in a mixing bowl with a paddle attachment.

Slowly add the liquid ingredients to a mixer at low speed. Let this process take about 1 to 2 minutes for a light and fluffy mixture.

Using a spatula, mix the dry and wet ingredients and fold until combined.

Butter a 10 x 5 loaf pan and add parchment paper to the bottom and up the sides to make removal easier.

Bake in the preheated oven for 1 hour until the top of the bread is brown; otherwise, it will fall in the middle once removed from the oven.
