Pumpkin Bibingka

Bibingka is a kind of baked rice cake that comes from the Philippines and is usually eaten for breakfast or as a snack. This one uses your leftover pumpkin and makes a delicious autumnal snack at any time of day. With sugar, butter, pumpkin and coconut, this recipe is the perfect autumn pick-me-up. So easy to make and everyone will love it.

Cream cheese
8 oz
Baking powder
1 tbsp
Caster sugar
2 cups
Butter, soft
1 stick (1/2 cups)
Eggs
3
Whole milk
1 cup
Coconut cream
1 can (13.5 oz)
Mochiko flour
1 box
Pumpkin
1 cup (pureed)

To Prepare

Step 01

Mix all ingredients, in order, in a mixer, pausing between adding each ingredient.

Step 02

Pour the batter into a baking pan lined with parchment paper. 

Step 03

Bake for 1 hour and 15 min at 275 Fahrenheit (135 Celsius) in a convection oven. If baking in a home oven, the baking time will be longer – it can even exceed 2 hours.

Step 04

Allow to cool before slicing.

Step 05

Serve with vanilla ice cream.
