Pickled Herring Fillets with Bean Salad

225 g, Pinto or borlotti beans
Balsamic vinegar

Preparation
- For the pickled herrings, put the vinegar, water and sugar into a pan, bring to the boil and leave to cool.
- Put the fish, vegetables and spices into a large preserving jar.
- Add the cold pickling liquor and seal the jar.
- Put in a cool place for at least 3 days.
- For the bean salad, wash the frisee and rocket, shake dry and tear into smaller pieces.
- Mix with the beans and dress with oil, vinegar, salt, pepper and lemon juice.
- Divide the salad between 4 plates.
- Take the fish fillets out of the pickling liquor, drain and place on top of the salad.
