Paleo Lemon Cake With Pine Nuts

Almond flour

Coconut flour
65 g
Salt
1/2 tsp
Bicarbonate of soda

Honey
150 ml, warmed
Coconut oil
150 ml, melted
Eggs

Coconut milk
155 ml
Lemons
2 tbsp lemon, 1 tbsp grated zest
Pine nuts

Preparation
- If you want to prepare a paleo lemon cake recipe start heating the oven to 180°C (160° fan) gas 4.
- Grease a 20 cm deep loose-based cake tin and line the base with non-stick baking paper.
- Sift the dry ingredients into a mixing bowl and stir to combine.
- Whisk together the honey and oil, then add the eggs, one at a time, whisking after each addition.
- Add the coconut milk, lemon juice and zest, and beat until well combined.
- Make a well in the centre of the dry ingredients and pour in the wet ingredients and stir thoroughly until smooth.
- Put into the tin and sprinkle the pine nuts on top.
- Bake for about 35 minutes until golden and springy to the touch.
- Cool in the tin for 10 minutes, then place on a wire rack to cool completely.
