Almond milk
75 ml
Chia seeds
1 tsp, ground
Rice flour
2 tbsp
Cornflour
2 tsp
Cinnamon
1/2 tsp, ground
Salt
1 pinch
Plantains
2 large, ripe
Vegetable oil
2 - 4 tbsp, for frying

Preparation

To prepare vegan fried plantain chips mix together the milk and chia seeds and leave to stand for 5-10 minutes.

Mix together the rice flour, cornflour, cinnamon, and salt.

Peel and slice the plantains into 2.5 cm.

Heat 1 tablespoon of oil in a frying pan.

Take a few plantain slices and coat them in the almond milk mixture.

Shake off the excess and drop them carefully into the flour mixture until lightly coated.

Cook in batches in the hot oil for about 3-4 minutes on each side until lightly browned, adding more oil to the pan as needed.

Drain the fried plantain chips on absorbent kitchen paper.
