Feta and Pea Tart

ingredients
All purpose flour
250 g
Butter
125 g
Salt
1 pinch
Eggs

Feta cheese
250 g, crumbled
Onion
1, chopped
Peas
250 g, frozen
Chives
1 bunch, chopped
Garlic
3 cloves, finely chopped
Eggs

Cream
200 ml, 48% fat
Salt
Pepper
freshly ground
Preparation
For the pastry
- Put the flour in a heap on a work surface, mix with the salt and make a well in the middle of the flour.
- Cut the butter into small pieces and scatter around the well.
- Break the egg into the middle and chop all the ingredients with a knife until they have the consistency of breadcrumbs.
- Quickly knead to a dough by hand, form into a ball, wrap in clingfilm and chill for about 30 minutes.
- Heat the oven to 200°C (180° fan) gas 6.
- Grease a 23 cm|9" springform flan tin.
For the filling
- Mix together the cheese, onion, peas, chives and garlic.
- Whisk the eggs and stir in the cream.
- Season with salt and pepper.
- Roll out the pastry on a floured surface and line the tin.
- Spread the pea mixture on the pastry, pour the egg and cream mixture over and bake for about 35 minutes until the filling is set. sprinkle with ground pepper.
- Serve your feta and pea tart warm.
