Hamburger with Ketchup in Ciabatta Roll

Shallots

1 tbsp strong

Oil for frying
Ciabatta

Tomatoes

Ketchup
2 tbsp
Chilli sauce
1 tbsp
Garlic
1 clove
Brown sugar
1 tsp
Olive oil
1 tbsp
Lemon juice
A dash
Salt
Cayenne pepper
Salad
50 g, mixed leaves
Mayonnaise
2 tbsp

Preparation

For the tomato ketchup
Drop the tomatoes into boiling water for a few seconds, then skin, quarter, deseed and dice.

Heat the oil and sweat the garlic until translucent.

Add the tomatoes and remove from the heat.

Stir in the chilli sauce and ketchup.

Add sugar, lemon juice, salt and cayenne pepper to taste. Cool to lukewarm.

For the burgers
Heat 1 tbsp oil and sweat the shallot until translucent.

Add the chopped parsley and marjoram and leave to cool slightly.

Then mix with the mince along with the egg and mustard.

Add breadcrumbs and mix well to combine.

The mixture should be workable but not too soft.

Season well with salt and pepper.

Shape into burgers and fry in oil in a frying pan for about 2-3 minutes each side Split the ciabatta rolls.

Wash and dry the salad leaves and tear into smaller pieces.

Fill the rolls with salad leaves, add a burger to each and top with mayonnaise and ketchup.

Put the other half of the roll on top and serve.
