Oat Scones with Goji Berries

ingredients
All purpose flour
110 g
Whole wheat flour
90 g
Baking powder
2 tsp
Salt
1 pinch
Brown sugar
45 g, soft
Oat flour
80 g, rolled
Butter
60 g, unsalted, melted
Eggs
1 large, lightly beaten
Buttermilk
250 ml
Goji berries
100 g
Honey
60 g, warmed
Preparation
- To prepare oat scones recipe first preheat the oven to 190°C (170° fan).
- Line a large baking tray with greaseproof paper.
- Combine the flours, baking powder, salt, sugar, and rolled oats in a large mixing bowl, stirring to mix.
- Whisk together the butter, egg, and buttermilk in a measuring jug.
- Add to the dry ingredients and mix well to make a moist batter.
- Add two-thirds of the goji berries and stir well to combine.
- Place a metal ring mold on the baking tray and spoon the batter into it, pressing down with the back of a wet tablespoon.
- Repeat until you have 12.
- Brush the tops of the unbaked oat scones with warmed honey.
- Bake for about 20 minutes until browned and set.
- Remove from the oven and leave to cool on the tray before moving to a wire rack.
- Top the oat scones with the remaining goji berries before serving.
