Brown sugar
225 g, light
Eggs
2 large, beaten

245, rolled
Apples
160 g, peeled, diced
Raisins
2 tbsp

Preparation

How to make Gluten-free Apple Cookies

Stir together the oat flour, bicarbonate of soda, baking powder and salt. Set aside.

Beat together the coconut oil, almond butter, sugar and vanilla in a mixing bowl.

Beat in the eggs.

Add the oat flour mixture and stir until just combined.

Stir in the oats, followed by the apples and raisins. The dough will be quite sticky.

Wrap the dough in cling film and chill for about 2 hours, until firm enough to be rolled into balls.

Heat the oven to 180°C (160° fan) 350°F gas 4.

Line 3 baking trays with non-stick baking paper.

Roll the dough into small balls and place well apart on the baking trays.

Bake for 9-12 minutes until golden.

Cool on the baking trays for 5 minutes, then place on a wire rack to cool completely.
