Besan Ladoo - sweet gram flour ball recipe

Besan ladoo is a popular Indian sweet made during festivals such as Diwali. Besan is a gram flour (chickpea flour) used commonly in the cuisines of the Indian subcontinent. These are easy little sweet treats to make at home. Take note of the changing texture of the gram flour when mixed with the hot ghee: it starts off lumpy, but with a bit of patience, it will turn into a loose, runny paste that smells wonderfully nutty as it roasts in the pan.

Ghee
50 g
Chickpea flour
200 g
Palm sugar
50 g
Desiccated coconut
150 g
Walnuts
50 g, chopped
Cardamom
1/4 tsp
Cinnamon
1/4 tsp

1. Heat the ghee in a pot. With the heat on low, add the gram flour and stir continuously for about 5 minutes. The flour mix will still look a bit lumpy. Be careful to prevent the flour mix from burning.

2. Add the palm sugar and cook for a further 15 minutes stirring continuously until the flour becomes a smooth paste and takes on a brown colour with a slightly nutty aroma.

3. Add 1 Tbsp water, 3 Tbsp desiccated coconut, the walnuts, cardamom and cinnamon. Cook on the lowest heat for a further 5-7 minutes stirring continuously until a thick mass is formed.

4. Let the dough cool slightly and then with damp hands, shape into small balls and roll in the remaining coconut.
