All purpose flour
225 g, self-raising
Baking powder
2 tsp
Salt
1 pinch
Butter
25 g
Parmesan cheese
55 g, grated
Milk
150 ml
Eggs
1, beaten

How to make bacon scones with parmesan cheese

To prepare bacon scones with Parmesan cheese first heat the oven to 200°C (180° fan).

Grease a baking tray.

Heat a frying pan and cook the bacon without fat until browned.

Sift the flour, baking powder and salt into a mixing bowl.

Rub in the butter, until the mixture resembles breadcrumbs and then stir in the grated cheese and bacon.

Make a well in the centre of the mixture and pour in just enough milk to form a soft but not sticky dough.

Turn out onto a floured surface and knead lightly until smooth.

Roll or pat out to a thickness of 2 cm.

Cut into 10 rounds with a 6 cm cutter.

Place on the baking tray and brush the tops lightly with a little beaten egg.

Bake the bacon scones with Parmesan cheese for about 15 minutes until golden brown.

Best eaten warm.
