Bocuse d'Or Americas Selection: 11 Countries will Compete

The first round of the culinary Olympics sees 11 countries compete head to head in Mexico City (Mexico), with just 5 places up for grabs for the Finale.

Mexico City is ramping up for the return of the energy charged Bocuse d’Or Americas contest, sponsored by S.Pellegrino, and held on 12 and 13 April during Sirha Mexico at the World Trade Center.

The lively culinary competition forms one of three continental selections of the Bocuse d’Or, the prestigious gastronomic contest, which is widely considered as the “culinary Olympics.”

This event will be particularly poignant as it's the first selection to take place since the passing of Paul Bocuse, the competition founder, earlier this year.

In this round 11 Countries from North, Central and South America will go head to head where only the 5 best teams will have a chance to go to the Finale in Lyon in 2019 and be in with a chance of winning the ultimate prize: the Bocuse d’Or.

This is the first time that the region includes Canada and the US,  meaning that the competition will be even stiffer given that last year's Bocuse d'Or winner was US's Mathew Peters.

The Challenge

The 11 teams, composed of the candidates, their commis and their coach, will compete over two days during which they will have 5 hours and 35 minutes to showcase their talent, passion and professionalism in two separate tests, as follows:

1. Theme on platter
Chefs will have to create a recipe with suckling pig and one or more of the following mandatory berries: raspberry, strawberry, blackberry and blueberry.

2. Theme on plate 
Chefs will have to prepare a whole salmon and crab meat.

The aim of each test is for the chefs take advantage of their origins and their countries’ culinary heritage to produce personal and unique recipes.
