S.Pellegrino present chef Phatchara “Pom” Pirapak from Bangkok’s Saneh Jaan restaurant at Banyan Tree's Thai restaurant Saffron, for two special evenings and two dinners only, on 6 and 7 April 2018.
Taking leave of Saneh Jaan at the Glasshouse in Sindhorn Tower awarded a Michelin star for its “dishes crafted from ancient recipes…a mix of classics and hard-to-find recipes” chef Phatchara will instead be surrounded by a saltwater lagoon at the luxury beachfront Banyan Tree resort in Phuket.
The Special Menu
Chef Pom will create an authentic Thai inspired menu with a contemporary twist for the occasion, served in the stunning surroundings of the elegant Saffron restaurant.
Chef Pom’s set menu begins with an appetiser of mud crab wrapped with ginger, chilli and citrus in wild betel leaf. Next follows a pomelo salad with crayfish, and a coconut soup with lotus stem and scallop. A dish of river prawn with stir-fried vermicelli and curry sauce follows, before a fine tenderloin Panang curry, from a recipe originating in the south of Thailand and served with nutritious riceberry rice.
Dessert is marian plum in citrus.
