Apricot Gazpacho

Preparation
- Place apricots and all the ingredients in a food processor apart from the bread and the mint leaves.
- Pulse until smooth.
- Add bits of the bread to the mixture to thicken it, pulsing in between additions.
- Stop when you have achieved a puree like consistency.
- Transfer to a bowl, cover and chill until you want to serve it.
- When you are ready to serve it, ladle into bowls and garnish with a few mint leaves.
