900 g, peeled and deveined
Salt

All purpose flour
300 g
Eggs

Cornmeal

Preparation

For Coleslaw | Po Boy Sandwich

To prepare the coleslaw served with fried shrimp po boy, combine the cabbages, carrots and onions in a large bowl.

Pour the dressing over the mixture and toss to combine.

Season with salt and pepper.

For Fried Shrimp | Po Boy Sandwich

Preheat oil in a Dutch oven to 190º C.

Season the shrimp with salt and pepper.

Season the flour with salt and pepper.

Whisk the egg and water together to create an egg wash.

Working in batches, dredge the shrimp in the flour and then in the egg wash.

Lastly, dredge the shrimp in the cornmeal.

Drop the shrimp one at a time into the hot oil.

Fry in batches until golden brown.

Drain on paper towels.

To Assemble the Fried Shrimp Po Boy

Spoon coleslaw on the bottom half of each roll.

Top with a generous portion of fried shrimp and cover with remaining roll.

Serve the fried shrimp po boy sandwiches.
