165 g
Sugar
2 tbsp
Baking powder
1 tbsp
Salt
1 pinch
Butter
40 g
Milk
120 ml
Cranberries
3 tbsp, dried
Orange zest
1, unwaxed, finely grated
Icing sugar
110 g
Orange juice
1 - 2 tbsp

Preparation

Step 01

For the orange scones

  • To prepare the orange glazed scones first heat the oven to 220°C (200° fan).
  • Grease 2 baking trays.
  • Sift the flour, sugar, baking powder and salt into a mixing bowl. Rub in the butter until the mixture resembles breadcrumbs.
  • Gradually stir in the milk, cranberries and orange zest to form a soft dough.
  • Turn out onto a lightly floured surface and knead lightly until smooth.
  • Roll or pat out 1 cm thick. Cut into rounds with a floured 6 cm cutter. Lightly knead together the trimmings and cut out more rounds
  • Place well apart on the baking trays and bake for 12-15 minutes until risen and golden.
  • Cool the orange scones on the baking tray for a few minutes, then place on a wire rack to cool completely.

Step 02

For the orange glaze

  • To prepare the orange glaze sift the icing sugar into a bowl and gradually beat in the orange juice until thick and smooth.
  • Drizzle over the orange glazed scones and leave to set.
