Olive oil
3 tbsp
Onion
250 g, finely chopped
Garlic
5 cloves, finely chopped
Fava beans
650 g, fresh, shelled
Vegetable stock
100 ml
Aromatic herbs
1, stripped, finely chopped
Parmesan cheese
50 g, grated
Crème fraîche
100 g
Lemon juice
White bread
sliced
Parmesan cheese
grated

Preparation

Fava bean dip recipe

To prepare the fava bean dip recipe start heating the oil in a pot and fry the onions and garlic.

Add the fava beans and quench with the stock.

Cover and cook for 30-40 minutes until the beans are soft. If necessary add some more stock.

Towards the end of the cooking time remove 1/3 of the beans and puree the rest.

Replace the whole beans in the puree and stir in the savory, Parmesan and the creme fraiche.

Season with salt, ground black pepper and a dash of lemon juice.

Drizzle the bread with olive oil and toast in a grill pan.

Season the bean dip again, transfer to a bowl, sprinkle with ground black pepper and drizzle with olive oil.

Serve the fava bean dip with the toast and the grated Parmesan.
