Vegan Tofu Salad with Eggplants, Sesame and Mange Tout

ingredients
Sesame oil
2 tbsp
Ginger
1 piece fresh, approx. 2 cm, finely diced
Garlic
1 clove, finely diced
Eggplants
2, sliced
Soy sauce
4 - 5 tbsp
Tofu
500 g, plain, drained and cut into approx. 2 cm cubes
Mangetout
200 g
Sesame seeds
2 tbsp light
Preparation
Heat the oil in a wok and fry the ginger and garlic.
Add the eggplants and fry for 5-7 minutes, stirring.
Deglaze with the soy sauce.
Finally stir through the tofu and mange tout.
Divide between bowls, sprinkle with sesame seeds, and serve with basmati rice, if desired.
