Soy milk
50ml / 1.7 fl oz, unsweetened and non­flavoured
Sunflower oil
150ml / 5 fl oz
Mustard
15g / 0.5 oz
Lemon juice
1/2
Salt
1 pinch
Turmeric
1 pinch

Method

Step 01

Start with all your ingredients at room temperature.

Step 02

Pour all the ingredients into a glass.

Step 03

Blend with an immersion blender on high speed until the mixture takes on a smooth creamy consistency.

How to store vegan mayonnaise

Cover your veganaise and store it in the refrigerator for up to 2 weeks. If liquid pools at the top, you can just mix it back in. We don’t recommend freezing vegan mayonnaise – just whip up a fresh batch!

How to use vegan mayonnaise

You can use vegan mayonnaise in just about all the ways you would use standard mayonnaise – for sandwiches, dressings, sauces, etc. It’s also great in potato or chicken salad, or as a base for creamy coleslaw. Mix other flavours into it and use it as a dip or condiment with crudités, or chips if you’re feeling naughty!

Recipe variations

There are plenty of ways to use your vegan mayonnaise creatively. How about this garlic version, similar to aioli? For a Japanese twist, add a teaspoon of wasabi for a fiery green hit. You can also use it in sweet recipes or cakes if you leave out the mustard, salt and turmeric and add a little sugar or artificial sweetener.
