Banana Fritters

ingredients
Eggs
1, large
Brown sugar
1 tbsp
Cornflour
4 tbsp
Tapioca flour
2 tbsp
Baking powder
1 tbsp level
Salt
a pinch
Coconut milk
50 ml, unsweetened, only the thick layer
Bananas
4 each, firm
Oil
for frying
Honey
to serve
Preparation
- Mix the egg and sugar in a bowl. Add the flour, baking powder and salt and mix to a smooth batter with the coconut milk. Leave to stand for 10 minutes.
- Meanwhile peel the bananas and cut each one into 4-5 pieces.
- Heat the oil in a frying pan, a wok or a deep-fryer. The oil is hot enough when bubbles form on the handle of a wooden spoon held in the oil. Coat the banana pieces in batter and fry in the hot oil over a medium heat for 3-4 minutes until golden brown.
- Drain on paper towel. Put into bowls, pour a little honey over and serve hot.
