Scarcella
An Italian dessert eaten in Apulia region at Easter time: 'scarcella', a baked cake given to wish good luck and prosperity

All purpose flour
500 g
Sugar
100 g
Baking powder
1/2 sachet
Lemon zest

Extra virgin olive oil
100 ml
Milk
200 ml
Eggs

Salt
A pinch
Preparation
- Make a flour "well", and add the sugar, the baking powder, salt, lemon zest and extra-virgin olive oil. Pour the oil very slowly, mixing it with a fork.
- Add slowly the warm milk until you have a smooth dough. Divide the dough into three parts, shape three bands, make a string and then a circle. Place a raw egg at the linking point of the bands.
- Put the 'scarcella' on an oven dish, brush it with another egg and some water.
- Add some granules of sugar and cook in the oven at 180°C for 30 minutes.
