Carrot Cake
Delicious and easy carrot cake recipe with pineapple, walnuts and cream cheese frosting

Corn oil
375 ml
Sugar
400 g
Eggs

All purpose flour
240 g
Cinnamon
5 g
Bicarbonate of soda
9 g
Vanilla extract
10 g
Salt
5 g
Carrots
300 g, shredded
Walnuts
150 g, chopped
Pineapple
75 g, crushed, drained
Cream cheese
1 package (85 g), softened
Powdered sugar
165 g
Butter
120 g, softened
Pineapple
35 g crushed, well-drained
Walnuts
38 g chopped
Preparation
- Combine oil, sugar, eggs, flour, cinnamon, baking soda, vanilla, salt, carrots, walnuts and pineapple in a large bowl.
- Mix until blended.
- Pour into greased 33x23 cm pan and bake at 180° C 1 hour.
- To make the cream cheese frosting, mix cream cheese, powdered sugar and butter until fluffy.
- Add pineapple and walnuts. Mix well.
