Wine and cheese – no more heavenly a pairing exists on this earth, unless you're teetotal and vegan of course. But are we getting the most out of our wine and cheese pairings? Are we killing the flavour of both with our amateurish matchmaking?
Eric Ripert knows a thing or two about pairing wine and cheese, being both French and a three Michelin star chef, at New York's Le Bernardin. In the Perfect Pairings video below – an oldie, but a goodie – Ripert discusses the intricasies of wine pairing with wine expert Aldo Sohm. Here are their top tips:
1. Try white or sparkling wine with tons of fruit, with young, fresh cheeses, particularly goat cheeses, to enhance the creaminess and cleanse the palette.
2. Try bold red wines with mature, salty cheeses, such as aged cheddar.
3. Blue cheeses need sweet wines.
