What do to with the bread once you’ve made it? Either eat right away, or freeze it...
When the bread finally comes out of the oven, you must gently place it on a cooking rack, or – even better, a basket covered with a dish towel to protect it from drafts.
If you choose to serve the bread as soon as it comes out of the oven, cut it immediately into large pieces so any excess moisture escapes from the cuts, leaving the crust very crisp. If, instead, you wish to serve it some hours later, leave the loaf whole and bring it to the table once you’ve put it in the oven for 10 minutes at 180°C. This enables you to serve warm, crunchy bread without any excess humidity.
In the case that there is leftover bread, place it in a paper bag and then in a plastic bag, which will help it to not dry out too much. Before serving, warm it in the oven again.
If you wish to conserve the bread for a long period of time, freeze it. Before putting it in the freezer, however, make sure it has completely cooled, then put it in a well-sealed plastic. Once you take it out of the freezer and bring it to room temperature, leave it in the bag so that it regains its moisture. Then, warm it up in the oven.
