Get ready London, the dynamic partnership behind Eleven Madison Park in New York, Daniel Humm and Will Guidara, are coming to the English capital to open a new restaurant inside the world famous Claridge’s hotel.
It’s long been rumored that Humm and Guidara, the duo behind EMP and the NoMad hotels in New York, Las Vegas and Los Angeles, were preparing to open in London but the news is now confirmed.
Humm and Guidara will open a gourmet restaurant called Davies and Brook, named after the hotel’s location on the cross section of Davies Street and Brook Street, in summer 2019.
Humm told Bloomberg he is excited about working with some of the produce in the UK like game, certain fish and some of the cheeses. However, don’t expect an EMP transplant project, he told Bloomberg: “We are not opening Eleven Madison Park in London.”

In a statement, the chef added: “Having the opportunity to bring our cuisine and hospitality to the most storied hotel in the world is really a remarkable feeling and a dream come true.
“But on a more personal level, this is my first time opening a restaurant in Europe, a place I left so many years ago to forge a career in America. Most people don’t know this, but I even worked at Claridge’s when I was 15 years old and it left an indelible mark on me. Claridge’s has always been a place I’ve felt connected to, so being able to come full circle is really emotional and exciting – it feels like coming home.”
There’s no news on exact menu or dish details but the kitchen will be headed up by Dmitri Magi who was chef de cuisine at EMP. Humm and Guidara told Bloomberg that new dishes would be created for London with an aim to offer two savory courses for lunch and three for dinner.
Claridge’s is a historic and iconic location that's been home to some truly wonderful chefs and restaurants. Guidara said the responsibility is not lost on him and his team: "The history of Claridge’s and the responsibility that comes with opening a restaurant within those walls is not something we take lightly – it’s an opportunity we’re truly humbled by and we can’t wait to open our doors later this year.”
