Around a year and a half ago we brought you the news that chef Thomas Keller would be opening his first restaurant in Miami, at an historic venue called The Surf Club. Now it looks like it's actually happening – in July 2018.
The Surf Club hotel first opened back in 1930, but was refurbished and relaunched in 2017, with Keller snapped up for snack duties. The restaurant will be nothing like his three star spots The French Laundry in California and Per Se in New York however, in fact Keller has spoken previously about not wanting to open another fine dining restaurant in America.
Nothing concrete on the dishes so far at the unnamed restaurant, but according to Miami New Times we can expect plenty of classic bistro fare, such as crab cakes, roast chicken (of course), lobster thermador, beef wellington and lemon meringue tart.
And you know what else? He's hiring. Head on over to the website if you think you could be the right person to join Keller's opening team.
Below, watch Keller speak candidly on the evolution of American cooking and the role of the chef in the 21st century.
