A special screening of Gualtiero Marchesi, The Great Italian is scheduled to take place at the Cannes Film Festival 2017 today. The film retraces the Italian maestro's career and influence on modern Italian cuisine, as well as the passion and knowledge he imparted to an entire generation of talented young chefs during his lifetime's work.
Three of Marchesi's protegees and big names in contemporary Italian cuisine, chefs Davide Oldani, Carlo Cracco and Andrea Berton, will be present in Cannes to help celebrate the occasion with a special dinner organised by S.Pellegrino – the film sponsor as well as the official water of the French film festival.
The menu promises to be filled with some extraordinary dishes from the trio of Italian chefs, reflecting some of the iconic flavours of Italian cuisine.
Each chef will prepare at least one dish for the evening. Carlo Cracco will prepare his signature appetiser of purple shrimp, Bronte pistachios and beetroot. It wouldn't be a dinner dedicated to Gualtiero Marchesi without the symbolic dish from the Italian city of Milan: Risotto Milanese with saffron, prepared by Davide Oldani. While Andrea Berton will prepare a main course showcasing one of his signature broths with a Prosciutto Crudo broth, skinned cod fish, parsley bread and radish.
