Dylan Jones and Bo Songvisava have told Fine Dining Lovers they will be opening a new restaurant in Bangkok.
In an interview discussing the relocation of their Bo.lan restaurant to a new site in Bangkok, the energetic duo revealed their newest plans to open an informal Thai restaurant in the city with traditional Thai drinks, cocktails and a tapas style menu with small plates of Thai cuisine.
Speaking about opening the new restaurant, with the potential name of 'Er' (an informal Thai term meaning yes or yeah), Bo said she is very excited about working on creating new dishes such as an idea for a whole crispy fried chicken skin removed from the bird and fried so it puffs into a ball.
Bo.lan, which placed 36th on Asia's 50 Best Restaurants List, will relocate to a new location in Bangkok May 2014. The pair explaining they're building a sustainable restaurant - solar panels, recycled water systems - with the aim of creating a carbon neutral establishment within three years.
Although undecided, the duo say the new venture could open as soon as late 2014 / early 2015.
