The chef explained to FDL in a recent interview about how he has a strong Japanese influence in his approach to cuisine something that can be seen in both presentation and the utmost respect and dedication that goes into sourcing the best possible ingredients.
Dishes such as soup of fermented rye with soured milk and smoked bacon fat served instead of a bread course. Scollop with a great big grating of truffle and cod cooked for 3 hours with preserved anchovy juices, vendace roe and yellow onions all appear in this Frantzen food party.
