Red chili powder
0.25 oz/0.5 tbsp
Sweet paprika
1 oz/2 tbsp

Yellow bell peppers
1, sliced
Large onions
1, sliced
Tortillas

Guacamole
9 oz/250g
Cheddar
6 oz/170g, grated

How to make this easy shrimp wrap recipe

Step 01

Dry your shrimp with a kitchen towel and add to a large mixing bowl. Sprinkle the hot chili powder, sweet paprika, ground cumin, and ground coriander over the shrimp, then add the sliced green and yellow bell peppers and onion to the mix.

Step 02

Cook over a medium heat for around 10 minutes, until the onion has softened and the shrimp appears opaque.

Step 03

Add 1 tortilla to each plate. Spread the guacamole across the surface of the tortilla and then add the cooked shrimp and vegetables. Top with the grated Cheddar cheese and fold up into a burrito-style shape. Place back into the pan briefly to grill the wrap closed for around 1 minute.

Step 04

Remove from the pan and slice the wrap in half. Serve alongside a bed of lettuce and any leftover guacamole.

 

Tips & tricks

As this is such a simple recipe there are only a few tips and tricks to follow for optimum results. Firstly, you don’t want to overcook the shrimp. It can become rubbery very quickly, so as soon as you see that nice pink color you want to remove it from the pan. If you’d like to give your peppers and onions more cooking time you can always add the shrimp to the pan later to get your shrimp spot on. You could also marinate your shrimp in herbs and spices ahead of cooking if you want to really enhance the flavors of the shrimp and make sure it stays extra juicy. Even an additional 20 minutes of marinating will help to bring out the best of the flavors.

Variations of the recipe
